Coming from a multi-generational cattle farm in Ohio, Elizabeth Almeida had known that she wanted to participate in the local food system from a young age. She furthered her agricultural education at Ohio State, where she learned the science of growing healthy and sustainable food in their Food Science Research laboratory. Her innovative interest in mushrooms, however, came years later, after buying her son a “Grow-Your-Own” mushroom kit. After spending hours researching the intricacies of mushroom growing on Youtube,  and pioneering her growing process in her basement, she began to impress local chefs and vendors with her delicious mushrooms. As a mushroom farmer, Elizabeth inherently grows with the environment in mind; her Baystate-certified organic mushrooms need less water and energy than most crops, and additionally work to turn waste, like sawdust, into nutrients for the ecosystem. Elizabeth’s mushrooms continue to be a local favorite; taste one of her eight varieties of mushrooms and you’ll be sure to experience what she calls, the “fun of fungi!”
